Default Valves - Sizing N/A vs. Bosst

I know on alot of n/a performance builds people tend to run larger valves.
I've heard there are vortices and vortexes and swirl effects and that bigger isn't always better, it has to be right.
On N/A car with oversize valves, aside from more airflow and power, what are the advantages? How does the engine behave/run?
I heard somewhere the other day that smaller vavles are better on a turbo car? Does this mean stay with stock? Go downsize?
Also on stock motors the intake valves tend to be larger by a bit than the exhaust, whats this relationship about?
Are oversize vales not neccessary or a good idea on a turbo car? Are there exceptions?
