Default Does size of tire profiles make a difference in racing?

Currently I have a 50 series tire profile. I used to have a 45 on my 17's that I used to own and of course a 60 for my stock 15's. If i were to try each of these tire sizes would I really see much of a difference as far as launching is concerned?

for road racing/autox and such you want a small stiff sidewall, for drag you want a soft tall sidewall

Yes you would notice a huge difference.
Launching on the shorter stiffer sidewalls will give you more wheel hop (45 series, guessing it was a 215/45-17). You do want a softer, taller sidewall for drag.
