Idle temp 203F, Highway temp 223F???
So I blew a head gasket because one of the hoses ripped, temp gauge usually sits slightly under half but went up to 3/4 before I shut the car off. Regardless, next morning I found coolant coming from the exhaust manifold so I changed the head gasket(original was indeed destroyed), replaced radiator, resurfaced head, pulled and resealed the coolant neck and head sensors. At the same time I got an s300 so I used that to keep an eye on the ect and city driving it sits at 203F normally which I find odd. The fan kicks in at 205F and at 60mph it goes up to 208F, at 70 it's 211F, at 90 it's gotten up to 223F. The temp gauge moves very slightly from those ranges up to halfway. Before I gotten the s300 years ago, when I was driving and noticed that the temp gauge does move up a little bit when I overtake on highway but nowhere past half. Is this normal, I would think at 220F the temp needle should be moving pretty close to high considering many people saying 180F-200F is average temp.

Car and engine?
Are you losing coolant?
Bubbles in the radiator with engine running?
Was the block top flat?
Did you replace the thermostat and thoroughly bleed the cooling system?

on the s300 try putting your fan switch at 185f. also saw you replaced your radiator, did you check if your fans blowing the right direction? would be pulling air through radiator

It's a d16z6, I was suspecting head gasket because there's very tiny amount of bubbles every min and I checked the block but I didn't have a straight edge. Instead I used a angle square which looked pretty straight (that might be my mistake there). But before doing that again I figured I'd ask to see if there's anything I'm missing.
not losing coolant
replaced thermostat
bled as much as possible
did coolant flush and bled again
fan blowing towards engine
replaced water pump, timing belt, rear main seal
