Default 2003 Civic LX - Burning coolant after head rebuild

Hello. I just rebuilt the cylinder head on my 2003 honda civic lx 1.7L SOHC D17A1. I replaced the valves, intake manifold (replaced with a junkyard stock), head gasket, timing belt, tensioner, water pump, intake gasket, starter motor. When I started the car it wouldn't start at first, but when it did a tonne of white smoke came pouring out of the exhaust pipe. I left it running for a few minutes but the smoke didn't stop or slow. The coolant does not seem to have mixed with the oil. The engine is also spiking / surging from about 1.1k (normal idle) to about 2.9k. Any help on diagnosis or what the problem could be would be greatly appreciated.

When you had the head off, did you check for flatness? If not, you may have a warped head on there.

and why did you have to rebuild the head ?
