What were they refering to when they said the coolant level was low (rad or overflow)?

In any case, you do not have to empty the coolant completely. You can simply add to the existing coolant. You can use Prestone brand universal coolant available at most chain stores. Make sure the overflow is closer to it's lower level when the engine is cold. With a cold engine, open the rad cap and inspect. If the level is not right at the top of the rad, fill it to the top and close the rad cap. You should be ok at this point. However, to be sure the level is truely ok, check the rad again when the engine is cold (the next morning). It should be at the top, if it's not simply fill it again.

(note, this write up was done assuming you have no major leaks and no major air bubbles in the coolant system. I assume you simply need a top off. If you do have leaks, get them fixed. If you do have major air pockets in the coolant system, you will need to bleed the system. Do a search)
