my valves on my old head looked like that.
its just normal buildup.
i took them to a wire wheel on a bench grinder and it took it right off.
then took them and the head to a shop and had them cut the valves and seats
that head looks to be in pretty good condition IMO
and i agree, looks like the head was leaking at the headgasket between cylinders, so have the head checked for warping

there's not much you can tell just by looking at them...unless some are burnt or broken. (BTW-those look very clean compared to some i've seen)
you can inspect the seat visually for pitting, but to check if they are good you need to test the sealing ability.
the free, DIY method- you can use water or alcohol and just pour it in the port with the head supported on it's side. watch the face of the valve for a minute or two. if you see a few small drips gather around the edge, not much to worry about. but if you see it running out in streams you've got a bad, leaky valve.
or take it to a machine shop and have them check that everything is in spec.

i would def lap in those valves anyways and get new valve seals on there thats the only way you know for sure take them out check them over and when lap them in you will beable to see your contact patch an hour of work can sae alot of head aches by just doin it right
