Temp gauge going down?

Default Temp gauge going down?

So saturday night I was with some friends doing a little photo shoot and when we finished we went for a little cruise. At this point the car had to have been running for at least 2 hours. Were just driving when i notice that my temp gauge is a little lower than nomal. I keep an eye on it and it continues to drop, the little bit of heat that we had on also starts to turn cold. We pulled over and popped the hood but it was dark as hell so we couldnt really see anything. We did notice how ever that the valvecover wasnt very warm, we could hold our hands on it as long as we wanted. The motor is a B16 and its in a 1995 VX hatch. We drove around a little longer and the temp would go up a bit and then go right back down. Any ideas?

thermostat is stuck open, replace with new oem thermostat. mine did the exact same thing
