i had a neighbor with an EK who would take her steering wheel with her. It wasn't really a quick release though. She had a pair of pliers and a screw driver in her purse all the time so she could put it in and take it off.

Truth of the matter is, yes they will take it if they want it bad enough. But you need to take that into perspective.
Two Honda Civics of the same approximate year sitting next to each other in an apartment parking lot.
One has aftermarket wheels, an aftermarket lip, aftermarket headlights, lowered, exhaust, foglights, seats, nice CD player, aftermarket steering wheel... And a little blue blinking light on the dash to indicate the armed alarm. a proximity sensor on this car so sensitive that you'd hear the car go berserk at the slightest touch.
The other car is almost entirely stock, on some S-Techs and stock struts, cheap CD player and Integra wheels. No alarm.
Which car is missing in the morning?
Why, mine was. The nearly stock car.
Part of my point here is sure, there are some thieves who will stake out your car, figure out your home alarm code, shoot your guard dog, cut the lock on the garage door and carefully deactive your alarm... if the car is worth that trouble.
Make your car too inconvenient to steal. I wouldn't think of a removable steering wheel as much of a theft deterrent unless it's used in conjunction with other layered security. Leaving the wheel there is about as dumb as arming your alarm but leaving the remote there so the thief can disarm it.

I drove a car with vice grips, as well as with a 'hub' lock, just to prove I could.
