The clutch/shifter in a cable transmission is engaged by the use of cables in a manual gearbox.
The clutch in a hydro tranny is engaged by fluid via a master/slave cylinder and shifting is engaged by a shift linkage and a pin.

Old cable tranny's =
90's and current hydro tranny's =
Current cable trannies = Better than old cables, but IMO not as good as hydrolic.
Really it comes down to opinion and driver preference. I can't stand how cable shifters shift. Clutch feel is vague IMO.
