If I shave/balance my oem pulley will I still be able to use my ac and ps??
Which route should I go purchase an unorthodox Ultra S or ultra R or oem+shaved/balanced?

I wouldn't get unorthodox. They are not harmonically balanced pulleys. I would get this:

The street version will allow you to run PS, and A/C. The Comp series deletes PS and A/C.

I, along with many friends have never experienced any sort of damage from using a pulley w/o a harmonic balancer.
