Check your coolant level, bleed the air out of the system, change the thermostat, if all of this still doesnt fix it. Look into the waterpump or you headgasket is going.

Does the car do this at high speeds (30+ mph)?
How long doese it take for the needle to go from normal to hot?
I had an electrical problem and my needle would sometimes jump around. But the needle moved way too fast to be overheating (Its not possible for a car temperature to go from normal to hot in a matter of seconds).

Sounds like an air bubble going across the temp sender.
with a cool engine, take the cap off the car and let it run till the thermostat opens. Ensure that the coolant level stays up. I have also heard there is a bleeder somewhere but I haven't looked yet.
Do this though as if you get an air bubble stuck in your head it will overheat and blow the head gasket.

more then likely your thermostat, replace that. untill then keep your heat on at full blast, all the time, it bypasses your thermostat, overheating will do some serious damage to you head. good luck

sounds like a thermostat problem. Check and see when your car is on if the hose leading to your thermostat is hard. If so, its your thermostat

I would have to agree with it being the thermostat, and if you do change it you might as well change your radiator cap.
