You don't have to completely remove the steering column. There are two main bolts that attach the steering column to the dash frame, remove those, and your steering column can rest on your driver seat after you've removed all the wiring to the signals etc...
As far as the airbag, disconnect your battery and you should be fine.

for your airbag, you need to disconnect the wire going to the airbag from the harness. Then you need to plug the airbag end into a connector (can't think of name) that should be located on the airbag. I hope that made sence.

No, that's part of the steering wheel column assembly. There are two larger bolts that attach the steering column to the dash frame. You will see them once you remove all the kick/knee panels or covers (don't know the exact name for those) from around the steering wheel. You don't have to remove any other bolts on or around the steering wheel itself.

I would like to clarify one thing. You do not have to take your airbag(s) out. Simply disconnect it. It can stay in the steering wheel while you drop the column. Same goes for if you have a passenger side airbag. Just disconnect it. It can stay in the dash while you remove it.
Here is a pic of a dash out of an EK, but is the same idea for an EG. Notice how the steering column is still in the car, it's just not attached to the dash frame and is resting on the floor, but is still by all means installed.
(if the owner of this pic would like me to remove it from this thread, please PM me)
