Default b18b obd2a swap in 1996 obd2a civic over heating problems

i recently just finished the swap in my civic and its a b18b obd2a swap in 1996 obd2a civic having over heating problems

first the fan wouldnt turn on so i have it jumped to turn on when the motors on and it will stay below the middle point for a long time but then when i start " driving it " and doing alot of accelerating it starts to rise alot
i filled it to the top with coolant and the fan now works and im still having the same problem

could it be a bad thermostat ? what else could be happening ill try to get you guys a video so you can see it jump around tomarrow on my way to school but for now i just hope somone might be able to shed some light
thanks !!

does it overheat when you are at a stop light and coo when you drive? if yes then its a blown head gasket. pull the plugs and see if they are really white
