For starters this is not an appearance issue. The ceramic coating is on the inside of the header so appearance has nothing to do with it. I personally have not had any experience with ceramic headers, but I have heard stories of guys having problems with the ceramic chipping off and getting into the rest of the exhaust system. So based on this information, I'd go with the steel! Good Luck!

what's creamic? sounds like soup.
ceramic coated headers acts like a headshield, preventing heat to enter the engine bay to some degree.
