Default high compresion pistons, help

my local shop, Inline Pro, says not to use pistons over a 11.5:1 on my b16, but i'm going to build my bottom end starting with a gsr block, i'd like to go to 12.0 to 12.5 or so to compliment my new s2s2 cams, (i already have new injectors to instal, and hondata s100 in already and tuned to this point) but i'm confused as to why a shop as nationally renouned as them for all there raceing acheivements would tell me not to go over such a low 11.5? also, did u guys know that 2000 si pistons (stock) in a gsr block (stock) will have a natural compression of 11.4:1, just a cheap way fo some broke builders to get more bang fo yo buck. (i do not plan on doing this myself but have seen it done, tested and dyno'd on two seperate cars).
