the idle air control on a DX is 3 wire....but on a ex its 2 wire...you have to get rid of one wire....orange one
that may be causing the jumping idle
as far as vtec....umm how do you know its not....sohc vtec is very subtle.....try hooking up a test probe light to the vtec signal wire yuo guys ran and see if its lights up when you get to the vtec crossover...if it is and the solinoids good your getting vtec.
but if theres no check engine light you should get vtec...
on DOHC vtec wireing the knock sensor is grounded too...make sure you wired up all the wires not just a signal wire to the knock and the vtec....if the knock isnt wired completly it may not code but it may not work either..
couple ideas to check

You don't just get rid of it! You have to move it from one pin to another
I belive it was A13 to A12. Search the archives for IACV trouble shooting and you will find it.
