Ok I have an EK hatch with a B7Y8 Mini me in it. At idle and <3k RPM the headlights dim. Any suggestions?

Check your belts and/or have the alternator tested.

Check the battery, I presume there is a bad cell and check also the charging system as well and finally check for loose harness.

Battery good new Napa and alternator good found out there was a short within the driver headlight never heard of that before but swapped them out and fixed the issue the local AutoZone guy says he been seeing the generic 9003 shorting and dimming the lights.
