is it a mechanical (small hose included) or electrical (pod sending unit included) oil pressure gauge?

and you installed the pressure_sender/pod and wired the gauge to the sender like the instructions say?
where did you put the sender/pod?

Is the sending unit grounding?
I had a similar problem, and it was because the unit was not getting any ground point

test that by just taking some spare wire, attaching it to say the rad support, and then touch the other end to an area close to or on the senting unit threads

the sending unit needs a ground
normally, it relies right off the block for that
if youre running any sort of...anything different, it can screw up the connection (IE- rtv sealant, hose, etc)

You just need one wire, touch one end to the area near the sending unit's oil port threads and the other end to the frame
--youre just trying to close the connection
Of course, the unit has a feed wire to the guage as well, that attaches to the posts on one end

im not going to guarantee this is your problem, but it was for me

your temps seem fine to me...
but im sure your gauge for the temps utilizes its own ground, as opposed to a sender that needs a ground
(thats usually how temperature senders are)

i didnt feel like running a new hole through the firewall
i just ran the pressure and temp wires through the grommet where the main harness enters the cabin

sounds like you have the volt meter set to the wrong scale.
having more than 14V in a car is virtually impossable... unless your alternator's regulator is faulty then the bulbs will start poping.
