Yeah, f*ck dealerships. They try to rip you off every possible way . Try and take the IAC off and clean any gunk out of it and retry it before you buy a new one.

Does the Z6 have a Fast Idle Thermo Valve (FITV)? It's the valve on the bottom of the TB that has coolant lines running to it.
Assuming you have it the easy way to check it is to take off your intake and plug the hole just inside the TB with your finger. It'll be the bottom of the two holes. When the motor is cold there should be suction felt when you plug the hole. After the motor warms there should not be any suction into the FITV. If there is still suction when the motor is up to operating temps and you plug the hole the idle should stabilize. That means the FITV is bad and should be replaced. It'll probably be ~$80-100 for a new one.
I hope you figure out your problem.

I don't know about you but, I think you got what you paid for.. Hey, it's not the dealerships fault that you paid 70 bones just to know that you replaced your IAC with a faulty IAC.. So in essence, you screwed yourself by bringing the car to the dealer..
But here's a word of advice.. From what I know, the ECU looks for resistance from sensors.. So what I would do is check for dirty connections and ohm check your sensor to see if it matches the specs..

Make sure you don't have any leaks anywhere (ex. intake manifold gasket), if theres a leak the ecu can't read idle speed and your map sensors goes nuts.

I'd just buy a new one. I looked it up on Majestic (yes, a Honda dealer):
IAC $117.52
IAC Filter $2.44
IAC Gasket $1.48
IAC $117.52
IAC Filter $2.44
IAC Gasket $1.48

I'll bet it's just a bad t-body gasket.
