Understeer is when you lose traction with your front tires and you can't steer. The thing to do is slow down so your front tires can get traction.
Oversteer is when the rear tires loose traction and you swing the back end of you car around. With over steer in a rear wheel drive car you need to either get off the gas and turn into the spin. For front wheel drive cars, get excited!!

Front wheel drive cars understeer when you accelerate out of a corner. This is when the front of your car plows forward when you are actually trying to turn.
Rear wheel drive cars oversteer when you accelerate out of a corner. This is when the rear of the car swings around when turning. Oversteering is called fish-tailing also I guess.
All cars can oversteer and understeer, but front drivers understeer very heavily and rear drivers oversteer very heavily.
The causes of understeer is simple because the front wheels are pulling the mass of the car making it want to push forward. The cause of oversteer is because the rear wheels are pushing the mass of the car but usually because of the lack of weight at the rear of the car it tends to swing out to the side. It's kind of hard to explain but it's just simple physics. This is why you want a 50/50 weight distribution.
To overcome understeer and oversteer it really depends on what kind of car you're driving. When coming out of a corner in a front drive Honda, your car begins to understeer, one method to correct it is too jerk the steering wheel back and forth very quickly until your tires catch. By doing this you may even be able to make the car oversteer a little to point you back into the right direction.
When you encounter oversteer, you can let off the accelerator and the car usually straightens itself out unless you've gone past the limits of the car. Then you will most likely do a 180.
