It's in your driver's door jamb.
For coupes and hatches it will be near the latch. For sedans it will be (IIRC) in the lower corner under the latch.
It will either be TYPE F (light gray / Excel Charcoal) or TYPE K (dark gray / Classy Gray).

NH-583M isn't an interior color code. That's an exterior color code. NH-583M means your car is Vogue Silver Metallic.
There is another sticker on your door jamb (or at least another code). It probably reads TYPE K.
If you want to make sure you get the right color parts/paint/etc., then you'll want to find your door jamb sticker.
Here is one on a coupe.

NH-583M isn't an interior color code. That's an exterior color code. NH-583M means your car is Vogue Silver Metallic.

So where would you go online or locally to find this Type K touch up paint since google didn't really bring up much of any real results.

You won't find "TYPE K Touch Up Paint". Interior paint isn't that common compared with exterior paint. If you find interior paint it's going to be in spray cans.

Well, I mean paint could help scuffs (which could probably come off in other ways) or you could repaint panels which are the wrong color. Paint won't help scratches and nicks though.
You could buy new (used) parts.

Depending if i get the doors in time. im picking up two full ek doors unless he sells them before i get there.. ill have two type k door panels with power. you can have them both for 75 bucks. pm me on monday and ill let you know if i got to them in time

I have to disagree with you. Depending on the severity of the scratch can easily determine of touch up paint on a door panel will be noticeable or not. In my case, I want to cover tiny dot's and some other minor scratches on the panel. I'm really sure you won't see the painted result unless I were to point it out. As it is, you probably won't see the small dot & tiny scratches as it is. It's just a mental issue for me because I know the imperfections are there and would like to cover it up.
Now if the scratches were much larger and greatly noticeable then at that point it would look funny if you sanded it down to then paint it which in that case I would just buy another door panel. It would would simply not match rest of the plastic interior.
