centering steering wheel ?
any tips to do this ? 3 attempts now and worse than before
(NOT alignment issue, simply fitted wheel wrong long time ago but never sorted it)

maybe u can remove the air bag and there is a big nut that holding the steering wheel to the steering colume.u can adjust from there.thats how i did mine when i install a aftermarket steering wheel

i know how to actually go about doing it but is getting it perfect simply down to judgment ?

Center the wheel and drive in a circle to the right, count how many turns it takes til you get to all the way.
Then center the wheel and drive in a circle to the left and count how many turns it takes that way.
If to the right it turns two and a third and to the left it takes two and a half you need to move it over a notch on the hub.
You could also have mis-adjusted the tie rod ends. The alignment shops use the tie rods to center the wheel and that can through off the rack.
Does it turn easier to the right than the left when you start to turn the wheel?
That means the rack is off.

if it bothers you, go get it aligned again. Maybe your alignment is on warranty. tell them your steering wheel is not straight. They align your car to the streering wheel.
