buying a thermostat what temp?

buying a thermostat what temp?
had my car plugged into a scanner and it shows the hottest it runs is 180-183 even on the highway. (south florida)
i know this is to cold iv never ran a car that runs any colder than dam near 200.
mitchell software says its sapost to run at 194.
so i went online to see what thermostats they sell at autozone/advance, they sell a 170/180/195. i just wanted to make sure that the temp you buy is the temp you want it to run at right?
funny part is the 195 which if mitchell is correct is the one i need and thats they one neither store has in stock they have the other two i have to order that one what kinda **** is that lol.

Stock temperature is 180. I don't see any need for a 195 unless your in a very very cold state like chicago or something that gets freezing cold in winter.

Start to opening 'F ('C): 169 - 176 (76 - 80)
Fully open 'F ('C) : 194 (90)
I think 180 is the OEM temp.
