does it take the stock redline and top speed governer off???

redline no. speed gov with the Fields is possible with some ECU's, but not sure about the VAFC, as my ECU had it removed already when I installed my VAFC

Field SFC doubles the speed limiter, not sure about the Apexi.
I'd go with the Apexi, fewer problems
