3" exhaust won't really do much good over 2.5" until you get into the really high horsepower range.
A lot of people say that less backpressure is always the best way, but I have seen motors larger than ours with bigger turbos pushing more boost than ours suffer from a 3" exhaust in the low rpm range.
A 2.5" is probably all you will need, and a good straight through muffler.
I would recommend getting an exhaust custom bent, you can save a lot of $$$ and know that it is done right, and the way you want, plus you can get pretty much any muffler with any pipe size you want.
If you really want a 3" then my recommendation would be the thermal research one. I have heard them before, I think they sound great, and they are a high quality system.
