Do not take it off. Try to keep always your car as original as you bougth it. When you try to sale it you can take the pices that you want and the car will look nice with all the original stuff. And when you pop the hood is good to see everything there

First, take it to a shop and have them drain the freon out of the system, if you just release it, that ****'s illegal, not to mention harmful. Oh, and you won't need a belt if you're removing it, right?
After that, it's just a matter of unbolting the lines from the compressor and condenser. Unbolt the lines from the firewall mount (where it goes into the core) and remove. Then unbolt the compressor from the engine mount. Then, pull the brackets off of the radiator and pull it out of the way so you can pull out the condenser. Presto! A/C free!
If your winters aren't too bad, it's not the end of the world to let your car warm up for a minute and then if it fogs up, just roll the window down a crack. That allows fresh air in. It's not a huge deal, I don't have A/C and it doesn't really bother me.

That pulley is part of the crank pulley, so no. Those lines run into the core, so if you took it apart, I think you can remove all the parts associated with the A/C, but I'm not positive.

No, your climate system uses the fresh air from the A/C to defrost. It still works, just not as well. Just one of the sacrifices you make...
