Yep it definitrly needs to be dry for my tastes. I wrap it in a few kitchen towels before I cut it and then I add some amino acids a few moments before I pull it out of the pan. You can almost get a bacon flavor.

I'll pass on the tofu. Have had it a few times with some Asian meals, but generally avoid it.

Soy = estrogen. No good for me.
