1 lb ground beef or turkey, whatever you want.
1 large can of tomato sauce...or make your own if you are so inclined
1 large can of diced tomatoes
1 large can of kidney beans
1 regular sized can of black beans
1 regular sized can of chic peas
1 small can of tomato paste. Don't use the whole thing. Just add to thicken the sauce as you go.
2 bell peppers of your choice
as much mushroom as you like.
2 chopped onion
garlic, lots of garlic
1 jalapeno
cayenne - 1/4 to 1/3 tsp
cumin - 1 tsp
Chilli powder - 1 tbsp...or more
salt - add later in the simmering process as the chilli will reduce
pepper - add later in the simmering process as the chilli will reduce
sugar - add later in the simmering process as the chilli will reduce

K so add your meat to a pan with a little olive oil and brown. Set meat aside.
Add the onion, bell peppers and jalapeno to the pan the meat was cooked in and simmer down. Add a little salt to sweat the water out of the mix.
Add meat back into pan and mix.
Get a large pot and heat that bish up a little.
Add all of the veg and meat to the pot.
All all other ingredients with the exception of your spices.
Bring to a soft boil then simmer.
Add your spices slowly and taste as you go. Taste taste taste! Add too much salt at the beginning then you are screwed!
Slow simmer that **** for 3-4 hours.

I like spicy withe a little sweetness so again, add your salt, hot and sweet as you go, a little at a time.

When done make some toast and butter that **** up then dunk away or make chilli sandwiches!

Enjoy
Noice! Thanks for taking the time to type all that out.

Gonna whoop up a batch this weekend!

I might sub the chickpeas with butter beans, tho.

No problem at all. Yea replace what you like My grandamas recipe doesn't have chicken peas. I just like em. So much that I take the skin off every single on of them before cooking

I also like the flavor of fire roasted diced tomatoes rather than regular ones.

What I usually do as well is double up everything in my recipe so I can get a lot more. It can always be frozen and eaten later too.

I do the same thing, especially when I make pasta sauce.

Dollar for dollar, making your own is the way to go. Huge chunks of sausage, tomato, onion, mushroom, etc. vs the pasta-sauce-flavored soup sold at the local grocer.

This is my next plan actually. A friend jarred a ton of freshly grown San Marzano tomatoes and gave me one. I'll make a sauce of some sort. I really want to make a three cheese ravioli from scratch and then make a smooth silky tomato sauce. I've been lazy lately though and haven't made the time to practice making the pasta. I want to get that down before making the entire dish.

I made (2) trays of Baklava to give away to my co-workers/boss for Xmas gift that I do every year. I know my wife is taking some to her work.

I went to check up on the trays this morning. Some one been eating from it. It has to be my wife or my wife father he is staying for another couple of weeks to help out with our son since my parents are in Hawaii on a cruise. I don't have to do a taste test since some one already did it for me, lol.

yeah just feed, feed, and feed Can`t believe how satisfying it is to make good food. I was anemic growing up because my parents were such shitty cooks. Girl I was dating loved what I made and actually thought I`ve been cooking for awhile when I just follow the recipes to the detail. I just played along

Making pizza is next for me but that has to wait until I get my own place hopefully in the summer. Going to buy a Uuni pro pizza oven.

That's awesome man. My story with my better half is the same. I knew nothing about cooking until I met her, followed a couple recipes and 10 years later I'm still cooking for her and love it

I'd looooove me an outdoor pizza oven like this. 700+ degrees of pizza cooking pleasure.

Try your dough and making a pizza on a cast iron pan. Those are nice and crispy. Not even close to pizza ovens like those that you posted but still good

Agreed. I thought I'd never find a technique better than reverse sear, but here we are. The progress of man! Like a damn John Prine song.

I don't cover mine. I do use magnets to hold the seals above the water level just as a precaution.
