The difference lies in the way the injectors operate and is directly affected by the type of injector driver your ECU has.
A high impedance injector is typically referred to as a "Saturated" injector that only requires around 1 amp from the ECU to work properly. This means very little heat is transferred through the computer itslef.
A low impedance injector is typically referred to as a "Peak and Hold" injector that can require anywhere from 4-6 amps or more from the ECU to work correctly and will need an ECU that is capable of handling a lot more heat.
99% of factory ECU's are set up as "saturated" or high impedance types and cannot work with P&H injector types. However if you are lucky enough to have an ecu with P&H capability then you can run either injector type without any issues.
It is important to check the resistance of your current injectors and make sure the new ones have a similar value to avoid damaging your computer.
Good luck and hope that helps.
