What shop, near San Jose, can I trust to build my motor correctly?

Icon6 What shop, near San Jose, can I trust to build my motor correctly?

I just don't trust any shops around here to build my block correctly. I feel like they are all going to take my money, throw my parts together and give it back. I want everything measured, plastigaged, etc. like this:

I don't have all these tools or I would do it myself. Any recommedations for a good shop in San Jose area?

I keep having people try to sell me ACL bearings, when they only come in Std. or oversize. The crank and block are stamped for color coded OEM bearing sizes. So, how can you just use a one-size-fits-all bearing?
