What fuel pressure with boost?
I have read through the archives but didn't find anything specific on how much
fuel pressure I should be set to?
I have the Vortech FMU 12:1, inline Airtex pump, and RC 440's.
What should the fuel pressure read at idle and open throttle?
Should I set fuel pressure with the vacuum disconnected?
Plan on boosting 7-14psi.

get rid of your 12:1 go with 6:1 set your static pressure around 40 and go from there

Your FMU should dictate how much fuel pressure your car is getting so you dont have to worry about that. With your fmu your fuel presure should rise with boost. So at idle you should be at like ~32psi and under boost you should be close to around 40 psi if not more. I dont really like FMU's that much, I perfer a paxton or aeromotive FPR. I usualy set it at 32 psi and on boost it goes to 42 psi, which is enough for 7-8 psi's.
