The difference between regular 316 stainless and foodgrade stainless is the quality I will let someone else with more knowledge explain that, I had it explained but its all greek to me.
I'll let my fabricator swing his knowledge ***** around here

Have him come swing his *****. lol
"foodgrade" is not a grade of stainless. There are quite a few different grades, but that's not one of them. Regardless, cheepo 304 is more than sufficient for downpipes and exhaust. You don't plan to park the car in the ocean for prolonged periods of time, right?

Wrong.
Food grade (sanitary stainless) stainless steel is completely different than the standard mill grade tubing and cold formed u bends. Its like comparing DOM to ERW.
Some notables, like DOM, sanitary ss has a mandrel run through the inside and outside to create a consistant wall thickness. The tubing is also polished on the I.D. and O.D.
304,316,321 etc are the metalurgical grades, it doesn't necessarily have anything to do with the quality of the manufacturing process, chinas version of 304 is not the same as americas version of 304.
The following requirements must be met and printed on sanitary tubing:
ASME SA249 (specification for burst pressures etc)
ASTM a270 (specification for seamless & welded austenitic stainless steel sanitary tubing)
UNS #
Tube construction (welded or seamless)
Manufacturer
HT#
Building #
Date manufactured
Shift #
Fittings (elbows, couplers etc) go through the same process. There is no comparison.

Yeah the names get thrown around, kind of like how everyone one call aftercoolers intercoolers.
