I'm running a B16a (All Stock) with T3 60 Trim Turbo, Tuning with a PLM and the AFR Reads 11:1, when at WOT I shut down the engine, put the gear to neutral and check the plugs, it is white, but I don't see any speckles in it.

The plugs are brand new NGK 8's

Should this be good?

I don't hear any detonation or see any sign on the plugs.

I tried tuning on 10:1 AFR, the plugs went a little brown. Car runs sluggish.

Sounds like your running hot, maybe try a 9 on the heat range?

if the plugs are brand new like you say you might have to drive on them a while before the change colour.

Timing? Are you datalogging? How much boost and what is the timing?

I'm boosting 5 psi and have 20 degrees total timing
