I think it's kind of subjective, but last build I did something like this.
1. Initial startup on ND 40. Idle for 15 minutes, then drain.
2. Re-fill with ND 40. Hard break-in for about 20 miles, then drain.
3. Re-fill with 10-40 dino. Drive for 500 miles, then drain.
4. Re-fill with 10-40 synthetic and change at normal intervals.

I dont think it really matters. You just want to flush the oil often when its new as Shepherd suggested and you don't want to be throwing out 60 bucks of synthetic oil in 30 minutes.

Yea I agree with Shepard basically. As for me:
1.) Conventional 10W-30, idle for like 15 minutes, then drain it.
2.) Conventional 10W-30, few mile hard break (per Earl's engine break-in write up), then drain
3.) Conventional 10W-30, gentle no boosting driving for about 500 miles, changing oil like every 100 or 200 miles (I didn't want anything in the oil haha).
4.) I waiting about 1000-1500 miles until I switched to Mobil 1 10W-30.
500 miles might be enough, but I've also seen reports/write-ups that state 1000 or even 1500 miles as the magic number
But it does matter though. You don't want to immediately do it.

Cheap oil for start up, but dont let it idle, hold the rpms at or above 2,000 so the oil washes the cylinders. The ring to cylinder break in is very quick, and intial start up is the most important part to get right. Do this for about 10 mins, drain oil and change filter( use cheap filters and oil for break in).
After that you'll get a lot of different opinions, I prefer to put a synthetic blend in and drive the car under a load varying the rpms. After that full synthetic Amsoil and let er rip ( this is not gospel)
