More people are likely to chime in if the pictures aren't just links, so figured I'd help ya out. I have black leather in my cars, so you can't really see they dirt like you can on tan. You might try one of these products that are a nice higher end products that a lot of good detailers use. http://www.autogeek.net/leathercare.html

for your door panels, spray them with soapy water (doesn't have to be very soapy) then put a dab of Go-Jo or Fast Orange on a rag and rub down the areas. it will have your panels looking like new again, do it on the seats too to clean them. It is important to use the water to cut it though because if you scrub too hard it will take the pigment out (check the rag to make sure you are not rubbing off any color)

That is the product I was trying to think of. I have heard good things about that stuff also.

Once the leather "cracks", can it be restored?

I use 1Z Cockpit Premium and Deep Plastic Cleaner for all the vinyl/plastic stuff in my cars. The Plastic cleaner does a hell of a job at getting grim and stuff up out of the material, you do not want to use that on a regular basis though.

For leather, I've just used Lexol Cleaner and Lexol Conditioner which has done a pretty good job at cleaning up leather in my vehicles.
