Default is my thermostat not working right?

i'm suspecting my thermostat (oem) is not fully functional because the car seems to take a longer than normal time to warm up to normal temperature. After the car is turned off for about 10-15 minutes, the temperature seems to drop too soon. But i'm not real positive if i'm just being paranoid or if i need a new thermostat. Are there ways to check besides actually taking it off and boil it? I've touched the top and bottom radiator hoses before and they both felt hot like they should be. Can the thermostat open up too soon or not soon enough?

when u let your car idle does your temp gauge go to about half, then when u start to move does it drop almost to cold or close to it??
that is usually a sign of a bunk t stat

yea the needle goes halfway but it seems taking longer than it used to be. But it never drops once it's there (moving or not)
