i would hope that the head is not on the car at the momen? if it isn't then use engine degreaser, then spray it down with water if you want, just make sure you get all the water out of it to prevent rust and any other problems that would arise with water.

Dirt? How did dirt get in your head? And yes water will work but make sure you dry it real good.

if you have time sand and smooth down the intake chambers to get better air and exhaust flow; plus it will remove debris that you cannot see. flush it with water and make sure it is all dry, like blow it out with an air compressor. Degreaser gets it pretty clean but make sure to wipe and spray with water several times before drying.
