Why do you want to make your Fit lighter? Is it a track car?

In that case I'd say ripping out insulating material and interior trim is a waste of time and will ruin the car as a daily driver.

While I would never do any of these to a daily driver, its your car...
Remove undercoating
Remove sound insulation under carpet
Remove metal support brackets from under the dash
Remove rear seat and seatbelts
Remove headliner, carpet, and plastic interior panels
Replace gas tank with smaller fuel cell
Replace back windows with lexan
Replace hood and fenders with fiberglass
Remove front window motors (Fits have power windows, don't they?)

And now the list I would consider acceptable (but not necessarily ideal) for a daily:
Lightweight front seats
Lightweight wheels
Remove cargo cover & floor mats
Remove spare, tools, and jack (you have AAA, right?)
Remove the metal support frame from the hood

The list goes on from there to the smaller gains stuff.
