Default rebuilt b16 head burning oil

i just got my head back form the machine shop, all brand new supertech valves, guides, seats, springs, retainers, keepers, homda oem valve seals, Honda oem head gasket and itr cams. After i put it together, i did a cold compression test and got 200-210 across the board. I also had a friend accidently put the throttle body gasket upside down but now fixed, but i noticed on decel and hit the gas or if the car sits awhile then starts up a oil smoke puff comes out, I know this means bad valve seals, but the machine shop swears they didnt damage them putting them on. he said to look over my pcv system which i know is hooked up right with a brand new pcv valve. Also i put in a new thermostat from honda, my fan comes on and i bled the system like 20-30 min but i noticed the guage will alter between normal and it will cool down to like 1/4 the way up when i drive, does this mean the thermostat is stuck shut? also i noticed my afrs are in the 16.0-17.1 and going to 13.3ish when giving throttle around like 3500 rpm. i also have private label mfg tri y headers.

Are you saying your temp gauge goes down while you are driving? If so that's normal.

Did you only rebuild the head or the whole motor? If you rebuilt the whole motor the piston rings could be incorrectly clocked or could possibly have the wrong gapping.

I once had that problem right after rebuilding and it was because the head had a hair line crack on it. Did they pressure test it?
The gauge issue could mean that the thermostat is stuck open..

Just the head is rebuilt, i noticed today more coolant comig from the headgasket area by the front left corner and under the header for cylinder 4. Im thinking this is causing all my problems with the oil as well, im going to rip off the head and go from there
