On my EK4, it originally rode on Koni Yellows and Tanabe GF210 springs. The springs were, IIRC, around 230lbs at the front and about 150lbs in the rear. The ride was proper shit.

I swapped it out...

The MC should not be causing the issue you're having.

Give it another bleed, a long gravity bleed would be best. A quick one like you'd do when changing a caliper really isn't going to cut it...

My brake calculator has an input for manifold pressure. Change the input to 0 to see the effect removing the booster would have on the pedal force. It jumps from 70lbf to over 200lbf!

I've not done it, but I've driven the car whilst being towed which is pretty much the same and there is no way in hell I would want brakes like that.

Yes they're not low, they're more like a 'Sport Pack' OEM option, but actually it's better for performance and ride. Going low is just for aesthetics, and personally IDGAF what it looks like to scene...
