Wider is not better, stickier is better. I think you should start by giving details about your car. (year, type, drastic mods, wheel size, what it's used for, weather you drive it in.)

I cannot understand why anyone would do this. You would also be running different tires which would lead to unpredictable handling at best.

Do you need all season tires? All season tires are meant to be used in snow and frigid cold. If you are not going to do either than you do not need an all season tire. Please answer this first.

Why not paint a set? Good paint and good prep will result in a lasting finish. To protect them coming off and on you can always get one of those sockets with the protective sleeve.

Stock pressure is a good place to start. If you notice uneven wear or weird handling you can move up or down by a few PSI if you know what you are doing. I think the FAQ explains it a lot better.
