can you over do it on an oil cooler?
As long as I have a thermostatic sandwich plate, other than getting 1 so big it blocks air flow to the radiator can you over do an oil cooler? I live in the desert southwest and it gets hot and we run in the heat. Im looking at a setrab level 9 20row dualpass with dual spal fans. Ill be running a mocal 180deg thermo-sandwich plate and a 190deg thermo-fan switch after the cooler. my last time attack event during practice the oil got up to 260 before I pulled off and it was only 55deg outside that day. my coolant temps never go above 190.

The problem with running a too big oil cooler is you will loose pump pressure. Use just the right size for your need and try to keep the hoses as short as possible.

I used a decent sized oil cooler. I didn't have any oil temp gauges, but the engine performed without any issue for over 50 hours of WOT. Still good to go (except not in a car anymore).

Can you over do it? Yes. You can add too much weight to the wrong end of the car as one example. A pretty small oil cooler, placed correctly in the air stream will be very effective at dropping oil temps.
Another way of saying it might be, you'll reduce system pressure. The pump itself won't be affected. System pressure is a function of pump capacity/speed, system volume, viscosity of liquid, and number/size of exit passages (bearing clearances, pressure relief valve spring tension etc).
He will be increasing system volume (reduce pressure) but as a result will be running cooler oil which will raise it's viscosity (increase pressure) so his overall pressure change may be negligible if his choice of oil remains static.
If, after adding the cooler, the OP needs more system pressure he can A) shim the pressure relief valve which creates more pressure and flow or B) he can bump his wt of oil to a thicker viscosity oil which will create more pressure but not necessarily more flow.
