Bolt torque specs SAE and Metric
To add a little more to the bolt strength issue, I found a couple of links that make for a handy reference.

If you are really sophisticated with your torque wrench, torque value depends on friction which depends upon lubrication and finish (tell that to your garage mechanic). Put some moly on it and you can torque that sucker less because the head isn't grabbing and all torque is transferred to the bolt shaft!
