JuSt wanted to make sure i was on the right track
What else can i do to make sure that everything continues to run smoothly, without removing tha whole p/s itself?
Also, is there something wrong with just removing the power belt?

I mean no offense, but why the hell would you take the belt off unless it needed changing? It might be robbing you of 1-2hp. You can gain that back with a tune up. Keep it on there or swap the rack with a manual rack. Don't be another half assed newbie.
This is coming from a guy that has tried every steering modification, done every honda engine swap, and currently has an F23a1 in a del sol, still retaining PS.
Since the belt is off, turn the pulley by hand. See how little resistance there is? Yeah, not really harming you!

so true. unless your itching for that last .0001 of a second its really pointless. for powersteering :-)
plus really to get the "full" effect you should take all of the power steering components off and replace the steering rack with a manual one. no point in getting rid of the belt with out removing the parts (and for what the parts weigh i really doubt its worth it)
