What size tires should I run???
Ok guys I need some opinions. I am getting new wheels sizes are 16x7 and 16x8 with a +25 offset. These are going on a 00 civic coupe. I am pretty low so I plan on running a 195/45/16 on the front but I am unsure what size to run on the rear (which are the 16x8's) I dont want to stretch a 195/45 on a 8" wide wheel. Any suggestions?

205/40-16 would work on the DX version only. If you go staggered, just keep in mind that if you go 195/45-16 on the front, the front tires will be about .4 -.6" taller than the rears in overall diameter.
205/45-16 will work on a car with stock specs. Not sure on lowered applications, but since your wheels are 8", the 215/45-16 is the best choice since the 205/45-16 rim width range would preclude it from fitting on an 8" wheel.

205/40-16 and 195/45-16 are TOO SMALL in diameter. On a 2000 Civic, 205/45-16 and 215/45-16 are the best matching sizes; I would stick with 205/45-16 on a lowered car.
What are you planning to accomplish with the staggered wheel widths? In most situations, your best bet is to get a set of matching 16x7 wheels and matching tires.

On the 2000 Civic Coupe, there were four trim levels. The stock tire size on the EX, DX, and HX is 185/65-14, and on the Si, 195/55-15. The outer diameter of those two sizes is identical. Both 205/45-16 and 215/45-16 have an outer diameter within 1 percent of the diameter of either stock size.
Neither 205/45-16 nor 215/45-16 rubs on a car with stock ride height, as long as the wheels have the proper offset, for maximum clearance. On a lowered car, it depends on the lowering, but unless it's really slammed, you ought to be okay with the 205/45 without any problems. There are a lot of good tires available in 205/45-16, too.

Re: What size tires should I run???
I had 205/45/16 on my 16x7 grams with a +38 offset and I rubbed in the front. The rim size is different because thats how they are available. I dont want more stretch on the 8" wide tires than the front. My main concern is not rubbing in the front. Here is how low I am currently. I dont know too much about offset and how that affects the rub issue but I rubbed with a 45 series. They are meaty 45's but I wanted to go 195/45. I just dont want that much stretch on a 8" rim.

Well, first, I would get 16x7 all around rather than 16x8.
I would also raise it up a bit. Lowered that much, I'm not even sure 195/45 or 205/40 will clear without rubbing.

You'd be better off finding a set that's all 16x7.
I'm surprised how many people make the mistake you're making - buying a set of wheels that aren't the right size, and then figuring out what tire size to make the wrong wheels fit. You're better off FIRST deciding what tire size is best for your car, and THEN getting wheels that are the right width for your tire size.
