Default Thread sealant or liquid gasket when assembling an engine?

Im beggining to put together my block finally, just small things like some of the block and head oil and water fittings. I realized i have been using high temp thread sealant on a few of the water and oil bolts like the oil pressure sensor and the water drain bolt. Is there a distinct different between thread sealant vs liquid gasket? i realize liquid gasket is used to seal flat surfaces as well, but will high temp thread sealant be alright for my threaded fittings?
