Rubbing will depend on wheel offset, wheel width and overall tire size. 15x7 +40mm offset with most 205/50R15 brands out there should not rub. I'm running 15x7 +45mm Koseis with 205/50R15 ES100 yokohama and it doesn't rub the fender lip or anywhere on the inside of the fenderwell, but the tires comes really close to rubbing the rear trailing arms. I wouldn't go lower than a +38mm offset thats where it can start to rub the lip with a 15x7 and 205 tires, unless you run some addt'l negative camber.

It depends on the tire.
Most 205/50-15 tires are approved for mounting on rims 5.5-7.5 inches wide. Most of them look pretty neutral on 15x6 or 15x6.5, but start to look stretched on 15x7. The one exception is the Falken Azenis RT-615, which is notorious for being larger than other tires labeled with the same size; the RT-615 fits nicely on 15x7.
