However since I'm in a nice mood:
1. RS*R ExMag (very quiet)
2. Apexi World Sport (little louder than stock, still quiet)
3. Stock ITR (stock sounding, slightly more raspy so I'm told)
4. Custom ES Oval muffler (depends...)

rs-r ex-mag exhaust, apexi ws or greddy sp are great choices for more of the quieter exhaust. i personally have the rs-r ex-mag and i love it. a little deeper than stock but not even close to loud.

I had the RSR catback on my teg, was great for hearing the motor instead of the loud fart can...

Spoon N1 with custom 2.5" piping... you'll barely hear it 
If you want quiet speed, try to find power somewhere other than your exhaust. It's actually pretty cool seeing quick cars using the stock GS-R exhaust. I had a buddy with Jun 3's in his car on a stock exhaust, caught countless people off gaurd.
